Blade

 

There’s a lot of beefy flavor in a blade steak and it’s relatively inexpensive. Blade steaks are made by cutting directly across the top blade muscle, which is actually pretty tender. But Blades are a bit chewy because there’s a seam of connective tissue running through the center with some tough gristle right in the middle of the cut.

Brisket

 

Brisket cut comes from the breast or lower chest. Brisket can be tough but juicy. The muscle around this area was used for exercise,  the point end has someconnective tissues and is best suited to low heat and slow cooking method.

Chuck

 

Chuck comes from the shoulder and neck of the beef. It is one of the most flavorful and economical cuts of beef. The shreds can give excellent texture to the dish. The downside is Chuck Meat is tough and has a balance portion of meat and fat, hence it’s best to cook them slowly in a liquid. The robust flavorwill be released and mix with your spicesallowing to infuse its flavor and juices back to the meat.

Shank

 

The cut comes from the leg portion of the animal. Also known as “the shin” (the foreshank) and “the leg” (the hindshank).

Shank is very lean and low in fat. But due to the constant use of this muscle by the animal, Shank tends to be tough, dry, and chewy, so is best when cooked for a long time in the moist heat.
